Confession: I’ve never had a pumpkin spice latte. I haven’t tried pumpkin spice Oreos, Pringles, or M&M’s either. (Yes, those are real products.) You don’t have to jump on the pumpkin spice consumer bandwagon to enjoy everyone’s favorite fall flavor. All you need is a can of pumpkin, two or three spices, and a few minutes in the kitchen. I often make pumpkin muffins or cookies this time of year, but the easiest way for me to get that pumpkin spice fix is with these delicious pumpkin pancakes.
Pumpkin Pancakes
- 1 cup whole wheat flour
- 1 cup all-purpose flour
- 2 tbsp sugar
- 1 1/2 tbsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 2 eggs
- 1 1/2 cups milk
- 3/4 cup pumpkin
- 1 tsp vanilla extract
- 2 tbsp vegetable oil
In a large bowl, stir dry ingredients together. Add the remaining ingredients and mix well. Spoon batter onto a hot griddle.
This recipe makes 12-14 pancakes (each about four inches in diameter), which is plenty for our family of four. These are hearty pancakes, so 2-3 per person is usually enough. Be sure to top them with real maple syrup!
