Cheesy Garlic Spinach Orzo

Most of the recipes I post here are desserts, but today I have an amazing orzo dish to share with you! This Cheesy Garlic Spinach Orzo is a favorite at my house. Let’s face it – no one in my family is a huge fan of spinach, but this is a delicious way to sneak it into our diet. This dish convinced my kids that they like to eat spinach!

You can serve this as a main course or a side dish. I like to pair it with a piece of fish, chicken, or steak. The recipe below makes enough for our family of four to enjoy it as a side dish. I adapted this recipe from one at Crème de la Crumb. You can find the original here.

  • 1 cup orzo pasta
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 2 tsp flour
  • 1 cup milk
  • 1 bag fresh spinach (5 oz.)
  • 1/2 cup shredded parmesan cheese

Cook orzo according to package directions. Drain and set aside. Heat olive oil in a medium-sized pan over medium heat. Add garlic and sauté until fragrant. Add flour and 1/4 cup of milk. Whisk to dissolve lumps. Add the remaining milk and continue to whisk. Cook until sauce has thickened (about 10 minutes). Add spinach to sauce and cook until spinach wilts (about 2 minutes). Remove sauce from heat and stir in parmesan cheese. Once cheese has melted, add orzo and stir to combine.
