Orange Blueberry Bread

Blueberries are one of my favorite summer treats. When I was a little girl, I would follow my mom next door to my grandparents’ yard to pick from their blueberry bushes. I definitely ate more than I ever put in my mom’s basket! These days, we don’t have any bushes in the yard,  but blueberries are still a summertime staple. When I visit my parents in July, my mom always makes this scrumptious blueberry bread. I like to eat it with eggs for breakfast, or have a slice with a cup of coffee for an afternoon snack. Add a little icing on top, and it becomes a delightful dessert!

Orange Blueberry Bread

  • 4 tbsp butter
  • 1/2 cup boiling water
  • 1 cup orange juice
  • 2 tsp vinegar
  • 2 eggs
  • 2 cups sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 4 cups flour
  • 2 cups blueberries

Melt butter in boiling water. Add orange juice and vinegar. Set aside.

In a large mixing bowl, beat eggs and sugar until fluffy. In a separate bowl, combine dry ingredients. Add dry ingredients and orange juice mixture alternately to the egg and sugar, beating after each addition. Beat until smooth. Fold in blueberries. Pour into two well-greased loaf pans. Bake at 325 degrees for 1 hour 10 minutes. Cool in pan for 20 minutes.
